Spicy Tex-Mex Walnut Meat Chili



COOK TIME: 25 - 35 MIN



8 oz. Spicy Tex-Mex Walnut Meat
8 oz. Imagine “No-Chicken Broth”
1 tiny green bell pepper (half of a large one)
1 tiny yellow onion (half of a large one)
3 garlic cloves
8 oz. tomato sauce
8 oz. diced tomatoes
8 oz. crushed tomatoes
1 tbsp of oil (macadamia nut or avocado oil)
1 tbsp tomato paste
26 oz. kidney beans
15 oz. can Bean Trio (pinto,kidney, black)
2 tsps chili powder
2 tsps granulated onion
2 tsps granulated garlic
2 tsps cumin
2 tsps salt
1/4 tsp cracked pepper
1 tsp raw cacao powder
pinch of cinnamon
Optional: Add a little date syrup (lessens acidity)

  1. Add ¼ cup water to pot and bring to a boil.

  2. Add package of walnut meat. Cook for about 1 minute.

  3. Add oil, onion, garlic, and bell peppers and saute’.

  4. Add tomato paste and stir. Cook for 1 minute.

  5. Add, diced and crushed tomatoes. Cook for 1 minute.

  6. Add tomato sauce. Let cook for a minute.

  7. Stir and add beans. Add seasonings, salt and pepper, stir and cover.  Let Simmer in covered pot for 25 - 30 minutes minutes.  Serve with vegan cheese, chives, vegan sour cream, and tortilla chips. Great on French frieshotdogs, and baked potatoes!
